My name is Brit and I’ve been a Brooklyn based entrepreneur for about two years, before that I worked in events and hospitality and pieced together enough odd jobs to maintain my self-described nyc foodie lifestyle ! I opened my first pop-up salad shop, Eden's, inside of a Greenpoint bar in 2021 and just opened my second in Williamsburg, at a bar/event space called Baby's All Right. I’m passionate about making healthy food accessible to everyone and cultivating a familial atmosphere between my staff and our customers and also .. creating a vibe :) I’m pro-real people and real foods and anti-AI lol …. Breaking Down With Brit Matheson

I wake up with all the sun coming through my windows. In the winter I had really heavy curtains hanging so I could stay asleep but in the summer I like waking up without an alarm and a bit earlier :) Most mornings I do a little meditation on my roof or in my living room then head out to start my day.

I run a lot of errands for the business most mornings but also have to respond to emails, order inventory, and post on our socials so I stopped by Odd Fox Coffee to get some computer work done and enjoy a cortado.

Errandssssss, every morning I pick up bread from Bakeri (since a slice of sourdough is a crucial element of the eden’s salad bowl) and Monday morning I also stop by Acme Fish (to get whitefish for our seasonal bowl) and Motto to restock on matcha soda :) Luckily for me I love walking around Greenpoint and usually run into some customers on the way.

I check on my staff at the Greenpoint store. I like to show face there most mornings, drop off deliveries and pick up any mail we have for the shop. I also really love my team and am continually trying to curate a sense of unity and family in our business (which is getting harder now that we’re at two locations).

I jump on my Citi bike and head to Eden’s Williamsburg, stopping by Marlow & Daughters to pick up more sourdough loaves. In the spring and summer this is a really nice commute that I can make in about 10 minutes, we’ll see how I feel once it gets cold again.

I enjoy my Miso Bowl with kale. I eat an Eden’s salad everyday but never the same one two days in a row! I love mixing it up and all the different customizations we offer. Today a few friends came by for lunch and we all sat outside. One of my favorite parts of this job is by far the human connection and how much of my day I get to share with friends and neighbors.

I walk home from work via Mccarren Park and try to unwind with a podcast or some music. When I get home I usually do a bit more work but it helps me a lot to have breaks where I at least ‘try’ to completely turn off that part of my brain and nature certainly helps! Today I got to walk home my new plant/pot from my friend lesley (her stopping by with a gift *and ordering a salad* was the highlight of my day!)

I almost die in an exceptionally hot hot yoga class at my local studio. Yoga has become an imperative part of keeping my sanity as the stresses of being a business owner pile up. It truly is a moving meditation and feeling that connected to my body does wonders for me. I also sleep so great after i’ve taken a class!

I watch the sunset from my window. It felt like a hard day even though everything i did was pretty straightforward. I think my brain is still getting used to having two locations and managing a team of 5 people. Still waiting for the feeling of ‘flow’ to kick in. I enjoy a glass of wine and my book on the fire escape and do my best to leave the day behind :)
