Sakura Smith

We first had Sakura Smith’s wild fermented vegetable yeast bagels at a friend’s event in the summer. Sakura served them with herb cream cheese and heirloom tomato, name a more perfect summer snack. Sakura’s innovative bagel has since become a small business called Bagel Bunny, a made-to-order one woman show. She is redefining the expectation of a bagel, and in NYC nonetheless.

Breaking Down With Sakura Smith

I quickly cook myself a dinner. I have just woken from a nap (5:30-10:15pm) and must rush so I can make it to my kitchen on time. I make a really simple cilantro rice with chicken and lots and lots of lemon. Eat.

Meditate for 15 min. Then get ready.

Head to kitchen. Never forget lipgloss.

Start baking. I listen to a lot of fun things and call my friends who live in other places. It is a magical time to work. Today I slammed my finger in the walk in fridge and damn, my finger hurts. Here are some fluffy bagels that come out of the oven around 6am.

Just got home from my kitchen and am eating a pizza slice that my sister had in the fridge and am drinking my morning tea. It’s hard to say when is morning and when is night when you work like this. But it feels so perfectly naughty to eat prosciutto and jalapeño pizza before most people are awake.

I start delivering. I like to walk, and take the bus if possible. It’s nice and quiet in the mornings, it’s so cold which helps me feel alive. I am doing this thing where I smile more and today it seems to make other people smile. I send notes to some of my friends to say “have a great day”.

Home. I work on my computer, I clean up a little, drink water and at this point am pretty exhausted and feeling kooky. I put on my softest robe and lay down. I set 15 alarms because I am scared I will sleep too long. I dreamt about having a baby that I named it cauliflower and then that I was walking around a beautiful house naked. Throughout the day some private clients come during the day to pick up their orders.

I properly roll out of bed. I clean up and go to my sister’s room, she works late at Dr Clark and is just waking up too. I go and lay down next to her. I ask her to make me a turkey sandwich on one of my bagels. I drink more tea, this time I ice it hoping it’ll wake me up. I try my hardest to rest on Fridays, my energy is low. I like how sleep messes with your mind. I will go for a walk eventually because my body likes to move. I will call my parents in California.

I go to a yellow light supper club party that my friend Mia Ponzi is hosting. She id just a natural genius, her ease inspires me. Tonight’s meal was seafood dinner. My favorite dish was the squid cooked with garlic, lemon, and tomato.

Hot, hot shower to rinse and Sleep. Finally. I’ll wake up at 7 tomorrow to work out and do a photo shoot with my friend Hedda. And my yeast must be fed.
