Breaking Down With Trisha Do

My partner Gùi and I wake up compartmentalizing food, herbs, ceramics, tableware, etc. It looks like we’re moving. But no, we’re just hosting a two-day dinner party at Mắm in Manhattan Chinatown.

Heading to the venue with Gùi and Trúc Anh— my lovely assistant. It’s us hugging and giving morning affirmations to our herbs and plants when the car moves like a snail on the bridge.

Finally, here after a morning rush traffic. Opening and locking the manual roll gate is an art. We’re in!

No Vietnamese operations, events, or productions happen without us properly burning incense and praying to our ancestors, then Ông Địa & Thầnt Tài (the Earth God and the Wealth God).

Prepping begins with cleaning and soaking broken rice—organizing and establishing our BOH system in a new kitchen.

Meet Steff— the ceramic artist who custom-made Xin Mời plates, and An— my pastry chef. We’re marveling at Steff’s beautiful work and being so excited for today.

Adding our little touch at the door so you know you’ve arrived.
— 2 PM
The family meal, aka the final taste test. We’re gaining confidence as the team enjoys the entrée.

Quick outfit switch, and it’s table arrangement time.

Mimi, our baby sister and front-of-house queen, arranges guest seatings and places their handwritten names on each plate.

An and I are getting the last things ready. We’re so lucky to look so chic in Peter Do for service.

The first seating comes at a golden time. Beautiful to see that the guests are excited like us. What a sight to see from BOH. I can’t stop smiling.

Soon enough, it’s turnover time. We have precisely 30’ to prepare the house for the next wave.

Right after serving the last entrée, we got to grab a bite and sip of water in secrecy.
