Tobalá sits right in the middle of Riverdale in the Bronx, a neighborhood gem and worthwhile trek for anyone outside of the borough. The restaurant’s inception came from a trip to Oaxaca that Moises Lopez and his wife went on for their anniversary, which absolutely changed their lives. The two fell in love with he food and quickly decided they needed to learn everything they could about the flavors and techniques of Oaxacan cuisine. Moises brought his vast learnings back over to NYC to share this food with the local community, from the green mole to super fresh tortillas, you wont want to miss anything on this menu.

My name is Moises Lopez, I'm 36 y/o from Dom. Republic.

What is your title and where do you work? 

Executive Chef and co-founder of Tobalá.

Was food a big part of your upbringing?

Food was a big part of my upbringing, my mom is an incredible cook and I have great memories around our table eating with my siblings.

What are your earliest memories of dining out?

My earliest memories of dining out are with my dad taking us to a local parrillada place when I was about 8 years old.

If you could give a piece of advice to someone who wanted to pursue your career, what would it be?

My piece of advice would be: Be patient and always believe in your ideas. Good things take time.

 
What's your favorite dish on the menu?
I really enjoy a good mezcal margarita. Esquites with chicatana mayo is my new favorite dish on our menu.

What is your favorite place to go out and eat at and what are you ordering?

I don't have a favorite place in NYC, I rather explore new places but if I have to choose a place I will go to Alma Negra in BK and order Aguachile.


What are your go-to shoes to work in?

Simply black crocks. 

Is there anything new and exciting coming up for you? 

Another trip to Oaxaca for work.
